Basically, Boudin is a combination of cabbage, onions, cracklins, milk, flour, pork blood, salt, pepper and summer savory, or senti bon, which means “smells good” in colloquial French. Each recipe is slightly different. The mixture is pulverized to some degree in a meat grinder before being stuffed into a sausage casing.
