Monticello Chamber Business Spotlight: Pink Heifer Saloon & Smokehouse

Lauren and Yo Fox moved from Long Beach, California, to a 27-acre horse farm in Monticello in May 2020, where they expected to stay semi-retired and to make the periodic 2.5 hour trip to the Chicago area to visit their sons and two granddaughters.

Then, on January 16, 2021, all that changed when their first attempt at a "date night" since the beginning of the pandemic came to a screeching halt. After Googling restaurants in Monticello, they found only one restaurant listed and it was located at some building called the Monticello House. The Foxes pulled up to the building and quickly discovered three things. First, that the business had been closed for some time. Second, that the building was for sale. Third, that the building, which clearly was the center piece of a wonderful town, was in desperate need of some love!

With that, the Foxes purchased the Monticello House and created the concept for the Pink Heifer Saloon and Smokehouse.

Since closing on the building in June, the Monticello House has completed a floor to ceiling, wall to wall renovation of the exterior (new roof, masonry, windows, new deck, etc.), as well as a gutting and remodeling of the entire bar area, kitchen and dining room.

The Pink Heifer has developed a one-of-a-kind saloon, where customers will be transported back to the late 1800's to enjoy unique drinks, tasty "vittles," live music and entertainment. Pink Heifer's ownership has created the "Saloon" with its unique ambience, to fill a much-needed void where a couple could enjoy a wonderful "date night," and anyone can celebrate a special occasion. The smokehouse dining room will be serving authentic southern style BBQ in a unique family friendly setting. When we say authentic style BBQ, we mean top quality meats smoked in our state-of-the-art smoker for up to 14 hours!

The Pink Heifer has nearly 9,000 square feet of food, drink and entertainment space. This includes a large attached banquet hall that will begin hosting wedding receptions and other functions beginning in the Spring/Summer of 2022.

With the support of the team at Woodford State Bank, the Foxes and the Pink Heifer Saloon and Smokehouse will be able to serve all of Green County, Dane County and Northern Illinois.
